Allow us to introduce you to the Head Chef behind the magic at Elm Dining, Monica.
Monica joined the Traverse Alpine Group in 2020 as Astra Falls Creek Chef de Partie and has since crafted her journey through the kitchens of Astra, Elm Dining and Huski Kitchen.
This winter, Monica proudly took the helm as Head Chef at Astra, and now, she’s bringing her passion and creativity to Elm Dining.
Monica says she has always had a love for cooking and creating recipes.
“I can remember being a very young child and being in the kitchen with my grandmother 24/7,” Monica says.
“I knew from a very young age that this was what I wanted to do and I just kept listening to that gut feeling and that has led me to where I am now.”
Monica has been working in restaurants from the age of 15, starting out in her local Italian restaurant in Melbourne. From there, her love and appreciation for food flourished, which saw her complete her apprenticeship at Rosetta – a part of the Rockpool Group.
Following four years with the Rockpool Group, Monica broadened her horizons, heading overseas to further her knowledge of cuisines and cultures around the world. Upon her return to Melbourne, Monica continued to grow and learn in her position at Dinner By Heston Blumenthal.
Monica’s journey then led her to Traverse Alpine Group, where she has held a number of roles in Falls Creek and Bright, and is now Head Chef at Elm Dining.
